Whether you’re planning a cozy gathering or simply treating yourself, this bread promises to deliver a mouthwatering experience with every bite.

Ingredients

For the Bread:

  • 1/2 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoon baking soda
  • 1/2 cup dark chocolate chips or semi-sweet
  • 1 (12 oz.) bottle of Guinness beer
  • 1/2 cup heavy whipping cream

For the Drizzle:

  • 1 cup powdered sugar
  • 2 tablespoons Bailey’s Irish cream
  • 1-2 tablespoons heavy cream

Instructions

  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C). This ensures that your bread bakes evenly.

  2. Mix the Wet Ingredients: In a stand mixer, beat together the softened butter, granulated sugar, and brown sugar until well combined. The mixture should be creamy.

  3. Incorporate Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Then, add the vanilla extract and continue to beat until the mixture is fluffy.

  4. Prepare the Dry Ingredients: In a separate bowl, sift together the all-purpose flour, unsweetened cocoa powder, and baking soda.

  5. Combine Ingredients: Gradually add about one-third of the Guinness beer and the heavy cream into the butter and sugar mixture. Beat on low speed to combine.

  6. Mix in Dry Ingredients: Add half of the flour mixture to the wet ingredients. Continue alternating between the remaining beer/cream mixture and the flour mixture, mixing until all ingredients are well incorporated.

  7. Add Chocolate Chips: Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.

  8. Prepare to Bake: Pour the batter into a greased 9×5-inch loaf pan, smoothing the top with a spatula.

  9. Bake: Place the loaf pan in the preheated oven and bake for 55-60 minutes. To test for doneness, insert a toothpick into the center of the bread; it should come out clean.

  10. Cool the Bread: Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

  11. Make the Bailey’s Drizzle: While the bread is cooling, prepare the drizzle. In a small bowl, whisk together the powdered sugar, Bailey’s Irish cream, and one tablespoon of heavy cream. If needed, add more cream to achieve your desired consistency.

  12. Drizzle and Serve: Once the bread has cooled, drizzle the Bailey’s glaze over the top. Slice the bread and serve.
