Method
- Preheat the oven to 350°F and line a baking sheet with parchment paper to heat treat the cake mix.
- Spread the cake mix powder onto the prepared baking sheet and bake for 5 minutes. Remove and allow it to cool completely.
- Beat the softened cream cheese in a medium mixing bowl until smooth and creamy.
- Add the cake mix and fold it into the cream cheese, then mix until fully combined.
- Fold in the freeze-dried strawberries until fully combined.
- Cover the dough with plastic wrap and chill in the refrigerator for 2 hours.
- Line two baking sheets with parchment paper. Use a cookie scoop to scoop the dough onto the sheets. Roll each into smooth balls.
- Allow the balls to expand for 15 minutes before coating.
- Melt the vanilla melting wafers using a double boiler or microwave.
- Dip each dough ball into the melted wafers, then place on a lined baking sheet.
- Before the chocolate dries, sprinkle crushed freeze-dried strawberries on top of half the truffles.
- Melt the red candy melts and drizzle onto the remaining truffles.
- Allow to set completely before serving.
Notes
Chilling the dough helps make it easier to roll into balls. You can use any flavor cake mix and any melted wafers. If you prefer not to heat treat in the oven, use the microwave method.
