Strawberry Truffles

Delicious strawberry truffles made with vanilla cake mix and cream cheese, coated in vanilla melting wafers for a sweet treat.

Ingredients
  

Cake Mix
  • 432 g vanilla cake mix Betty Crocker
Truffle Filling
  • 227 g cream cheese softened to room temperature
  • 120 ml freeze dried strawberries roughly chopped
Coating
  • 567 g vanilla melting wafers Ghirardelli
  • 120 ml red candy melts Wilton
  • 10 ml freeze-dried strawberries crushed, for topping

Equipment

  • Medium mixing bowl
  • Hand mixer or stand mixer
  • Baking tray

Method
 

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Spread the cake mix powder onto the prepared baking sheet and bake for 5 minutes.
  3. Remove from the oven and allow it to cool completely on a wire rack.
  4. Beat the softened cream cheese in a medium mixing bowl until smooth and creamy.
  5. Add the cake mix and fold it into the cream cheese with a rubber spatula, then mix with the mixer on medium-high speed until fully combined.
  6. Fold in the freeze-dried strawberries until fully combined.
  7. Cover the dough with plastic wrap and chill in the refrigerator for 2 hours.
  8. Once chilled, line two baking sheets with parchment paper and use a 1 ½ tablespoon cookie scoop to place the dough onto the sheets.
  9. Roll each into smooth balls and allow them to expand for about 15 minutes.
  10. Melt the vanilla melting wafers using a double boiler or microwave on a low setting.
  11. Dip each dough ball into the melted wafers and place onto the lined baking sheet.
  12. Sprinkle the crushed freeze-dried strawberries on half of the truffles before the coating dries.
  13. Melt the red candy melts in microwave safe piping bags and drizzle onto the remaining truffles.
  14. Allow to set completely before serving.

Notes

Chilling the dough makes it easier to roll into balls. If you dip the truffles too soon, the coating may crack. Let them expand for about 15 minutes before coating. You can use any flavor cake mix or melting wafers.
