Ingredients
  

Puff Pastry
  • 490 g frozen puff pastry sheets (thawed)
Filling
  • 120 ml strawberry jam/preserves
  • 2 tsp cornstarch
  • 1 tsp fresh lemon juice
Egg Wash
  • 1 egg whisked
  • 78 ml heavy whipping cream (divided)
  • 1 tbsp coarse sugar
Glaze
  • 120 g powdered sugar (sifted)
  • 0.25 tsp vanilla extract
  • 1 pinch kosher salt

Method
 

  1. Preheat your oven to 400 degrees F.
  2. Unfold one sheet of puff pastry and cut into six rectangles. Place on a parchment-lined baking sheet. Repeat with the second sheet.
  3. In a bowl, mix strawberry jam, cornstarch, and lemon juice. Spoon onto each rectangle, leaving a ½-inch border.
  4. Whisk the egg with 1 tablespoon cream. Brush borders of rectangles with egg wash.
  5. Prick reserved pastry rectangles with a fork, place on filled rectangles, press edges to seal, and crimp with a fork. Brush with egg wash and sprinkle with coarse sugar.
  6. Bake for 18 to 20 minutes until golden brown. Cool for 30 minutes.
  7. Whisk powdered sugar, vanilla, salt, and remaining cream to make glaze. Drizzle over cooled strudels.

Notes

These strudels are best enjoyed fresh but can be stored in the refrigerator for up to three days. Try using different fruit preserves for variety!
