Ingredients

Strawberry Mixture
  • 2 cups strawberries fresh – hulled
  • cup granulated sugar
  • 1 tsp vanilla extract
Whipped Cream
  • 2 cups heavy cream chilled
  • 1 g Optional: fresh strawberries or mint leaves for garnish

Equipment

  • Blender
  • Fine-Mesh Sieve
  • Mixer

Method

  1. Several hours before working, place a large mixing bowl in the freezer to chill.
  2. Puree the strawberries in a blender or food processor until smooth.
  3. Strain the puree through a fine-mesh sieve, into a mixing bowl. This helps to remove the seeds and creates a creamier mousse.
  4. Whisk in the sugar and vanilla into the puree until the sugar has dissolved.
  5. Remove the frozen bowl and whip the chilled heavy cream with a hand or stand mixer until soft peaks form.
  6. Fold the strawberry puree into the whipped cream until fully combined.
  7. Spoon the mousse into serving glasses or bowls, cover, and refrigerate for at least 2 hours to set.
  8. Garnish with additional whipped cream, fresh strawberries, or mint leaves to serve.

Notes

For a more vibrant flavor, consider using very ripe strawberries. This dessert pairs beautifully with a crisp white wine.
