- Mix the graham cracker crumbs, sugar, and melted butter in a medium bowl until well combined. Press the mixture firmly into the bottom of a 9×9-inch dish to form the crust. Place in the refrigerator to chill while preparing the filling.
- Arrange just enough of the sliced strawberries over the graham cracker crust to form a layer. Chop the remaining strawberries and set aside.
- Beat the cream cheese, confectioner’s sugar, and vanilla extract in a large bowl until smooth and creamy. Fold in the whipped topping.
- Spread half of the cream cheese mixture evenly over the sliced strawberries. Add the remaining chopped strawberries on top of the cream cheese.
- Add the strawberry gelatin to the remaining cream cheese mixture, and stir until combined. Spread the strawberry cream cheese over the chopped strawberries. Add the whipped topping on top of the strawberry cream cheese layer.
- Combine the graham crackers and strawberry gelatin in a food processor. Pulse until the graham crackers are crumbs. Add the melted butter and pulse again just until blended. Sprinkle the strawberry graham cracker crumbs over the whipped topping.
- Chill in the refrigerator for at least 4 hours or until set. Before serving, garnish with fresh strawberries if desired. Cut into squares and serve chilled.
