Ingredients
  

Dough
  • 432 g Red Velvet Cake Mix
  • 2 eggs – large
  • 90 g butter – melted
Coating
  • 60 g confectioner’s sugar
  • 0.5 tsp cornstarch

Method
 

  1. Preheat the oven to 375 degrees. Line several baking sheets with parchment and set aside.
  2. Combine the cake mix, eggs, and melted butter in a large bowl. Mix together using a firm rubber spatula until all of the dough is smooth and thick.
  3. In a small bowl, combine the confectioner’s sugar and cornstarch. Stir together with a fork.
  4. Scoop the dough using a medium cookie scoop. Roll each scoop in the sugar mixture to coat.
  5. Place coated dough balls on the prepared baking sheet.
  6. Bake each baking sheet in its own batch for 9-12 minutes.
  7. Remove and let cool on the baking sheet for several minutes before transferring to a wire rack to finish cooling.

Store these cookies in an airtight container to maintain their crunchiness. They can last up to 5 days.
