Smoked Pig Shots

Delicious smoked pig shots wrapped in bacon and filled with a creamy mixture, perfect for your next barbecue.

Ingredients
  

  • 450 g smoked sausage cut into ¾ inch chunks
  • 340 g thick cut maple bacon
  • 113 g softened cream cheese
  • 60 ml sour cream
  • 1 whole jalapeno (stem, seed removed, diced)
  • 60 g sharp cheddar cheese (shredded)
  • ½ tsp Slap Ya Mama seasoning
  • 120 ml barbecue sauce
  • 30 ml honey
  • 18 g brown sugar
  • to taste jalapeno slices

Equipment

  • Baking Sheet
  • Toothpicks

Method
 

  1. Preheat the smoker to 375 degrees.
  2. In a small bowl, whisk together the barbecue sauce, honey and brown sugar. Set aside.
  3. Cut bacon in half and wrap each piece of sausage with a strip of bacon.
  4. Place on a baking sheet and use toothpicks to hold bacon in place.
  5. In a medium bowl, beat cream cheese until light and fluffy, about 2 minutes.
  6. Add sour cream, diced jalapenos, cheese and seasoning. Stir to combine.
  7. Place cream cheese mixture into a quart size baggie and make a small cut in the corner of the baggie.
  8. Squeeze cream cheese mixture on top of the sausage and add a slice of jalapeno to the top.
  9. Brush each pig shot with the honey barbecue mixture and place on the grill grates directly.
  10. Smoke the pig shots for 60-75 minutes or until the bacon is crispy.
  11. Carefully remove and enjoy.

Notes

These pig shots are best served fresh off the smoker. Feel free to experiment with different cheeses or sauces!
