Ingredients
  

Shortbread Dough
  • 113 g butter, softened
  • 50 g granulated sugar
  • 1 g egg
  • 0.5 tsp vanilla
  • 0.25 tsp almond extract
  • 125 g flour
  • 0.25 tsp salt
  • 50 g strawberry jelly

Equipment

  • Baking Sheet
  • Silicone Mat

Method
 

  1. Line a large baking sheet with a silicone mat and make room in your fridge for a cookie sheet.
  2. In a large bowl, add the softened butter and beat with an electric mixer on HIGH until light and fluffy.
  3. Stream in the sugar while beating.
  4. Beat in the egg, vanilla extract and almond extract very well.
  5. Evenly sprinkle the flour and salt on the dough. Mix with the electric mixer just until it comes together.
  6. Scoop out 2 teaspoons of dough, roll into a ball, and place it on a baking sheet.
  7. Dip your pinky in flour, make half a heart on each dough ball, then complete the heart.
  8. Use a 1/4 teaspoon measure to place jelly on each side of the heart.
  9. Place the cookies in the fridge for one hour to chill before baking.
  10. Preheat the oven to 350°F and bake the cookies for 12 minutes.
  11. Let the cookies cool on the baking pan completely before removing them.

Notes

Ensure the cookies are completely cool before removing them from the pan to prevent breakage. Experiment with different jams or jellies for a variety of flavors.
