- Line a large baking sheet with a silicone mat and make room in your fridge for a cookie sheet.
- In a large bowl, add the softened butter and beat with an electric mixer on HIGH until light and fluffy.
- Stream in the sugar while beating.
- Beat in the egg, vanilla extract, and almond extract very well.
- Sprinkle the flour and salt over the dough and mix with the mixer just until it comes together.
- Scoop out 2 teaspoons of dough, roll into a ball, and place on baking sheet.
- Use your pinky to make a heart shape in each dough ball and fill with jelly.
- Place cookies in fridge for one hour to chill before baking.
- Preheat oven to 350°F. Bake cookies for 12 minutes until edges are golden brown. Let cool on pan.
Notes
Ensure the cookies are completely cool before removing from the pan to prevent breakage.
