Ingredients
  

  • 680 g pizza dough
  • 794 g whole tomatoes drained
  • 15 ml extra-virgin olive oil
  • 2 cloves garlic
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil
  • 0.125 tsp crushed red pepper flakes
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • 30 g yellow cornmeal
  • 227 g mozzarella shredded
  • 30 g freshly grated Parmesan
  • 140 g sliced pepperoni such as Hormel cup n' crisp

  • 15x10-inch jelly roll pan
  • Food Processor

Method
 

  1. Let pizza dough stand at room temperature, lightly covered, for 1 hour.
  2. Preheat oven to 500 degrees F. Lightly coat a 15x10-inch jelly roll pan with olive oil.
  3. Combine tomatoes, olive oil, garlic, oregano, basil and red pepper flakes in the bowl of a food processor; season with salt and pepper, to taste.
  4. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 15x10-inch rectangle. Transfer to prepared jelly roll pan, pressing dough to the sides of the pan.
  5. Using a small ladle, spread TOMATO MIXTURE over the surface of the dough in an even layer, leaving a 1/2-inch border.
  6. Top with cheeses and pepperoni (yes, ALL the pepperoni).
  7. Place into oven and bake on the lowest oven rack, rotating once, for 16-18 minutes, or until the crust is golden brown and pepperoni are crisp.
  8. Serve immediately.

Notes

This pizza is great for customizing with your favorite toppings. Feel free to add vegetables or different types of cheese to suit your taste.
