Ingredients
  

Main Ingredients
  • 1.5 cups Homemade Pancake Mix Recipe linked in the notes
  • 180 ml buttermilk
  • 180 ml milk
  • 2 g eggs
  • 1.5 tbsp melted butter
  • 1 tsp vanilla extract
Optional Garnish
  • 1 tbsp coarse sugar
  • 200 g fresh berries for serving
  • 100 g granola for serving
  • 100 ml pure maple syrup for serving

Method
 

  1. Preheat your oven to 425 degrees F. Line a quarter baking sheet with parchment paper and spray with baking spray. Set aside.
  2. In a bowl, mix the Homemade Pancake Mix with the buttermilk, milk, eggs, melted butter, and vanilla extract. Stir until just combined. Let sit for 5-8 minutes.
  3. Pour the batter into the prepared baking sheet. Spread out evenly with a spatula. Sprinkle with a tablespoon of coarse sugar.
  4. Bake for about 12 minutes or until lightly browned.
  5. Cut into squares and serve with fresh berries, granola, and pure maple syrup.

Notes

My quarter baking sheet is 13 x 9 x 1 inch. This recipe works best with the linked Homemade Pancake Mix.
