Ingredients
  

Cheesecake
  • 226 g cream cheese softened
  • 2 large eggs room temperature
  • 1 large egg yolk
  • 0.5 tsp vanilla extract
  • 2 tsp Chocolate liquid stevia
  • 1 pinch salt
  • 1 packet natural red food coloring
  • 28 g unsweetened cocoa powder
  • 120 ml sour cream
Optional Chocolate Sauce
  • 85 g sugar-free chocolate chips melted
  • 2 Tbsp unsalted butter melted

  • 4-inch Springform Pan

Method
 

  1. Preheat oven to 325 degrees F.
  2. In a stand mixer, combine cream cheese, eggs, vanilla, salt, and sweetener. Blend until smooth.
  3. Add remaining ingredients and blend on high speed until smooth.
  4. Grease a 4-inch springform pan and wrap the bottom with aluminum foil.
  5. Place the pan in an 8-by-8-inch baking dish and fill with hot water halfway up the sides.
  6. Pour cheesecake filling into the pan and bake for 40-45 minutes.
  7. Remove from oven, let cool for 10 minutes, then refrigerate for 4-6 hours.
  8. Mix melted chocolate and butter, drizzle over cheesecake if desired.

Notes

The sugars in the Nutrition Facts are from the natural lactose in cream cheese and sour cream. If you prefer a sweeter cheesecake, adjust sweetness before adding eggs. Vanilla stevia can substitute if you don't have chocolate stevia.
