Ingredients
  

Cookies
  • 1 box Red Velvet Cake Mix can be substituted for chocolate cake mix + 2 tbsp flavorless gel food color (15.25 ounce box mix)
  • 120 ml oil canola or vegetable
  • 2 eggs
  • 80 g all-purpose flour
Frosting
  • 226 g cream cheese room temperature
  • 113 g butter room temperature
  • 420 g confectioner’s sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F and line 1-2 baking sheets with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine cake mix, oil, eggs, and flour. Mix until just combined.
  3. Use a medium cookie scoop to portion the dough out onto the prepared baking sheets.
  4. Bake for 10-12 min, they will look puffed and will set as they cool.
  5. Cool on the baking sheet for several minutes before transferring to a wire rack to cool completely.
  6. Place the room-temperature cream cheese and butter in a large mixing bowl. Beat until whipped together.
  7. Slowly mix in the confectioner’s sugar and vanilla. Once the mixture is no longer powdery, beat well until light and fluffy.
  8. Spread or pipe the cream cheese frosting over the top of the cooled cookies and add sprinkles or chopped nuts if desired.

Notes

For a colorful twist, try adding sprinkles before baking for a festive look. Store cookies in the refrigerator and bring to room temperature before serving.
