- Preheat the oven to 350°F and line 1-2 baking sheets with parchment paper or a silicone mat.
- In a large mixing bowl, combine cake mix, oil, eggs, and flour. Mix until just combined.
- Use a medium cookie scoop to portion the dough out onto the prepared baking sheets.
- Bake for 10-12 min, they will look puffed and will set as they cool.
- Cool on the baking sheet for several minutes before transferring to a wire rack to cool completely.
- Place the room-temperature cream cheese and butter in a large mixing bowl. Beat until whipped together.
- Slowly mix in the confectioner’s sugar and vanilla. Once the mixture is no longer powdery, beat well until light and fluffy.
- Spread or pipe the cream cheese frosting over the top of the cooled cookies and add sprinkles or chopped nuts if desired.
Notes
For a colorful twist, try adding sprinkles before baking for a festive look. Store cookies in the refrigerator and bring to room temperature before serving.
