Method
- Preheat the oven to 350°F and line 1-2 baking sheets with parchment paper or a silicone mat.
- In a large mixing bowl, combine cake mix, oil, eggs, and flour. Mix until just combined.
- Use a medium cookie scoop to portion the dough out onto the prepared baking sheets.
- Bake for 10-12 minutes, they will look puffed and will set as they cool. Cool on the baking sheet for several minutes before transferring to a wire rack to come to room temperature.
- Make sure the cookies are completely cooled before adding the frosting.
- For the frosting, place the room-temperature cream cheese and butter in a large mixing bowl. Beat until whipped together.
- Slowly mix in the confectioner’s sugar and vanilla. Once the mixture is no longer powdery, increase the speed and beat well for several minutes, until light and fluffy.
- Spread or pipe the cream cheese frosting over the top of the cooled cookies and add sprinkles or chopped nuts if desired.
Notes
Store the cookies in the refrigerator and bring to room temperature before serving. You can decorate with sprinkles or chopped nuts to add a festive touch.
