Ingredients

Red Velvet Cake Mix
  • 15.25 ounces Red Velvet Cake Mix 1 box
  • 300 ml water listed on cake box
  • 3 eggs eggs listed on cake box
  • 120 ml vegetable oil listed on cake box
  • 16 ounces cream cheese frosting 1 package (or homemade frosting)
  • 1 pound white chocolate candy coating or almond bark
  • 15 pieces Red Candy Melts optional for red stripes on top

Equipment

  • Baking Sheet

Method

  1. Bake the cake according to directions on the package.
  2. Let it cool completely. Optionally, put it in the freezer for about 45 minutes or let it cool overnight.
  3. Put the entire cake in a bowl and crumble it up using your hands.
  4. Stir in the container of frosting into the crumbled cake, about ½ cup at a time, until it holds together when rolled into a ball.
  5. Roll the mashed cake and frosting into balls and place them on a large baking sheet. Refrigerate for about 30 minutes to set up.
  6. Melt white chocolate candy coating according to package directions and dip each ball to cover evenly.
  7. Place the cake bites back onto the pan or wax paper and let them set up. Refrigerate to harden quickly.
  8. If decorating with sprinkles, do so before the candy coating hardens. For red candy melts drizzle, melt candy, spoon into a bag, clip a corner, and drizzle onto each bite.

Notes

For best results, ensure the cake is fully cooled before crumbling. These bites are quite rich, so smaller sizes are recommended.
