Red Hot Dark Chocolate Fudge

Ingredients
  

Fudge Base
  • 300 g Sugar
  • 120 g Margarine do not use butter
  • 150 ml Evaporated Milk
  • 198 g Marshmallow Cream
  • 90 g Semi-Sweet Chocolate Chips
  • 450 g Ghirardelli 60% Cacao Bittersweet Chocolate Chips
  • 0.5 tsp Vanilla Extract
  • 4 squares Ghirardelli Dark Chocolate Bars broken into pieces
  • 60 g Red Hots
  • 30 g Valentine Sprinkles

  • Mixer with Whip Attachment

Method
 

  1. Line 9x13 glass pan with parchment & then spray lightly with cooking spray. Set aside.
  2. Put chocolate chips & vanilla in mixer bowl. Set aside.
  3. Heat sugar, margarine, evaporated milk & marshmallow cream in 3 qt. heavy saucepan over medium heat.
  4. Stir until mixture boils, boil for 5 full minutes- stirring constantly.
  5. Remove from heat. Pour into mixer bowl over the top of the chocolate chips.
  6. Beat with whip attachment in mixer until it's smooth & looks like silk. (if you did not use premium chocolate- it will be grainy & watery)
  7. Transfer to your prepared dish.
  8. Top with red hots, chocolate bar pieces & Valentine sprinkles
  9. Refrigerate for at least 2 hours before cutting & serving.

Notes

For an extra kick, consider adding a pinch of cayenne pepper to the chocolate mixture. This fudge makes a great gift when wrapped in decorative boxes.
