- Whisk together the milk and pumpkin puree until well combined.
- Add the pudding mix, sugar, and pumpkin pie spice and whisk for 2 minutes or until the pudding thickens. Place the pudding in the refrigerator for 5 minutes to soft set.
- Sprinkle 1-2 tablespoons of Oreo crumbs into the bottom of each serving glass, ensuring the bottom of the glass is well covered.
- Add a layer of pumpkin pudding on top of the crushed Oreos.
- Continue alternating cookie crumbs and pudding layers, ending with a layer of Oreo crumbs.
- Allow the pudding cups to set in the refrigerator for 30 minutes.
- Place the shredded coconut in a small ziplock bag with 3-5 drops of food color. Seal the bag and vigorously shake the coconut, massaging the color into the coconut until it is evenly dispersed.
- When ready to serve, sprinkle a small amount of the green coconut over the pudding cups to create grass. Decorate with 2-3 candy pumpkins.
