  • 480 ml whole milk chilled
  • 240 g pumpkin puree
  • 1 packet 3.4 ounce box of instant vanilla pudding mix
  • 1 tbsp brown sugar
  • 1.5 tsp pumpkin pie spice
  • 24 cookies Oreo cookies crushed
  • 60 g sweetened shredded coconut
  • 5 drops Green food color
  • 16 pieces Candy pumpkins

Method
 

  1. Whisk together the milk and pumpkin puree until well combined.
  2. Add the pudding mix, sugar, and pumpkin pie spice and whisk for 2 minutes or until the pudding thickens. Place the pudding in the refrigerator for 5 minutes to soft set.
  3. Sprinkle 1-2 tablespoons of Oreo crumbs into the bottom of each serving glass, ensuring the bottom of the glass is well covered.
  4. Add a layer of pumpkin pudding on top of the crushed Oreos.
  5. Continue alternating cookie crumbs and pudding layers, ending with a layer of Oreo crumbs.
  6. Allow the pudding cups to set in the refrigerator for 30 minutes.
  7. Place the shredded coconut in a small ziplock bag with 3-5 drops of food color. Seal the bag and vigorously shake the coconut, massaging the color into the coconut until it is evenly dispersed.
  8. When ready to serve, sprinkle a small amount of the green coconut over the pudding cups to create grass. Decorate with 2-3 candy pumpkins.
