Ingredients
  

Truffles
  • 120 g peanut butter
  • 60 g unsalted butter softened
  • 42 g powdered sugar
  • 0.5 tsp vanilla extract
  • 0.125 tsp flaky salt
Coating
  • 113 g dark chocolate chopped
  • 1 tsp coconut oil
Garnish
  • 10 g chopped peanuts
  • 10 g flaky sea salt

Equipment

  • Electric Mixer
  • Double Boiler or Microwave
  • Fork or Chocolate Candy Tool

Method
 

  1. In a mixing bowl, add the peanut butter, powdered sugar, butter, vanilla, and salt.
  2. Use an electric mixer to beat the mixture together. If the butter is too soft, freeze the mixture for 20 minutes before proceeding.
  3. Scoop out 10 balls of dough and place them on a small baking sheet lined with wax paper or a silicone mat.
  4. Place the peanut butter balls in the freezer for 20 minutes.
  5. While the peanut butter truffles are chilling, melt the chocolate and coconut oil together using a double boiler or microwave.
  6. Remove the balls from the freezer. Using a fork or chocolate candy tool, dunk each ball into the melted chocolate, then allow excess to drain off.
  7. Place the truffles into the fridge to set for at least 5 minutes before serving.

Notes

These truffles are perfect for making ahead of time. Store them in the refrigerator and enjoy within a week.
