Ingredients
  

Peanut Butter Truffles
  • 120 g peanut butter
  • 60 g unsalted butter softened
  • 42 g powdered sugar
  • 0.5 tsp vanilla extract
  • 0.125 tsp flaky salt
  • 113 g dark chocolate chopped
  • 1 tsp coconut oil
For garnish
  • to taste chopped peanuts for garnish
  • to taste flaky sea salt for garnish

Method
 

  1. In a mixing bowl, add the peanut butter, powdered sugar, butter, vanilla, and salt.
  2. Use an electric mixer to beat the mixture together. If the butter is too soft, freeze the mixture for 20 minutes.
  3. Scoop out 10 balls of dough, and place them on a small baking sheet lined with wax paper or a silicone mat.
  4. Place the peanut butter balls in the freezer for 20 minutes.
  5. While the peanut butter truffles are in the freezer, melt the chocolate and coconut oil together using a double boiler or microwave.
  6. Remove the balls from the freezer, and use a fork to dunk each into the chocolate.
  7. Place the truffles into the fridge to set for at least 5 minutes before serving.

Notes

These truffles are rich and creamy, perfect for serving at parties or as a gift. For a variation, try using milk chocolate or adding a splash of liqueur to the mix.
