Ingredients
  

Truffle Mixture
  • 1/2 cup peanut butter
  • 60 g unsalted butter softened
  • 42 g powdered sugar
  • 1/2 tsp vanilla extract
  • 1/8 tsp flaky salt
Chocolate Coating
  • 4 oz dark chocolate chopped
  • 1 tsp coconut oil
Garnish
  • to taste chopped peanuts for garnish
  • to taste flaky sea salt for garnish

Equipment

  • Electric Mixer
  • Double Boiler
  • Microwave

Method
 

  1. In a mixing bowl, add the peanut butter, powdered sugar, butter, vanilla, and salt.
  2. Use an electric mixer to beat the mixture together. If the butter is too soft, freeze for 20 minutes before proceeding.
  3. Scoop out 10 balls of dough and place them on a baking sheet lined with wax paper or a silicone mat.
  4. Place the peanut butter balls in the freezer for 20 minutes.
  5. Melt the chocolate and coconut oil together using a double boiler or microwave at 50% power in 30-second intervals.
  6. Remove the balls from the freezer and dunk each into the melted chocolate using a fork or chocolate candy tool.
  7. Place the truffles in the fridge to set for at least 5 minutes before serving.

Notes

These truffles are best served slightly chilled. You can also experiment with different kinds of chocolate or nut butters for a personalized twist.
