Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs or vanilla wafer crumbs
  • 5 tbsp unsalted butter, melted
  • 1 tsp salt
Filling
  • 8 oz cream cheese, softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring or beet juice concentrate
  • 1 cup heavy whipping cream, whipped
Garnish
  • 50 g mini chocolate chips or red velvet cake crumbs
  • 100 g fresh raspberries or white chocolate ganache

Method
 

  1. Combine graham cracker crumbs, melted butter, and salt in a mixing bowl and mix until well combined.
  2. Press the mixture into the bottom of a lined tray to form the crust and chill for 15 minutes.
  3. In another bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, and mix well.
  4. Add red food coloring or beet juice concentrate until the desired pink color is achieved.
  5. Fold in the whipped cream gently to maintain the airy texture.
  6. Spread the cheesecake filling over the chilled crust and smooth the top with a spatula.
  7. Chill the cheesecake for at least 1 hour until set.
  8. Cut into bites and garnish with mini chocolate chips, red velvet cake crumbs, fresh raspberries, or white chocolate ganache.

Notes

For a vibrant color, you can adjust the amount of red food coloring or beet juice. Garnishes add an extra touch of flavor and appeal.
