Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
For the filling
  • 1 package cream cheese, softened 8 oz
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 box instant vanilla pudding mix 3.4 oz
  • 1.25 cups cold milk
  • 1.5 cups heavy whipping cream, cold
  • 3-5 drops green food coloring adjust to your 'Grinchy' shade
For topping
  • 100 ml whipped cream for topping
  • 50 g red heart sprinkles

Method
 

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the crumbs are evenly coated and the mixture looks like damp sand.
  2. Press the crumb mixture firmly into the bottom and up the sides of a pie dish. Place in the refrigerator for 15 minutes to firm up while you make the filling.
  3. In a large mixing bowl, beat softened cream cheese until smooth and fluffy. Add powdered sugar and vanilla, and continue mixing until light and creamy.
  4. In a separate bowl, whisk together the instant pudding mix and cold milk for about 2 minutes, until it thickens.
  5. Fold the pudding into the cream cheese mixture until well blended and silky.
  6. Mix in a few drops of green food coloring, adjusting the amount until you achieve the signature bright 'Grinch green.'
  7. In another bowl, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the green filling mixture to create a light, airy texture.
  8. Pour the filling into the chilled crust, spreading it out evenly with a spatula.
  9. Refrigerate for at least 4 hours, or overnight if possible, so the pie firms up nicely.
  10. Just before serving, top with swirls of whipped cream and sprinkle on little red candy hearts — the perfect finishing touch for your Grinch-inspired dessert.

Notes

This pie is best served chilled. You can prepare it a day in advance for a stress-free dessert experience. Adjust the green food coloring to achieve your desired Grinchy hue.
