Ingredients
  

Cheesecake Mixture
  • 240 ml vanilla-flavored custard-style yogurt
  • 16 oz low-fat cream cheese
  • 3 tbsp honey
  • 2 tsp freshly squeezed lemon juice
  • 2 tsp pure vanilla extract
  • 0.125 tsp kosher salt
To Assemble
  • 2-3 sheets low-fat graham crackers
  • 2 tbsp crushed graham crackers
  • 4 tbsp low-fat whipped topping for garnish
  • 4 units fresh strawberries for garnish

Method
 

  1. Place all of the cheesecake mixture ingredients in a large bowl and beat with a hand mixer until the mixture is a smooth consistency, scraping down the sides of the bowl as necessary.
  2. Place dishes on a tray.
  3. Place 2 tablespoons crushed graham crackers in the bottom of each individual dish.
  4. Spoon approximately ¾ cup of the cheesecake mixture onto the graham crackers in each dish.
  5. Refrigerate, uncovered, 2-3 hours, or until set.
  6. Garnish with a dollop of whipped topping and 1 fresh strawberry per dessert, if desired.

Notes

These cheesecake cups taste best when chilled for a couple of hours to set, but they can be enjoyed immediately if you're short on time. Garnish with a variety of berries or use macerated strawberries for a syrupy topping. For a fun twist, add layers of graham crackers and fresh berries for a parfait-style dessert.
