- Set your oven to 375°F (190°C). Lightly grease a large baking dish with olive oil.
- Arrange the thin-sliced chicken breasts evenly in the baking dish. Season them lightly with pepper and herb and garlic seasoning.
- Spread a layer of green onion cream cheese over each piece of chicken, making sure every portion is well covered.
- Layer the sliced mushrooms over the cream cheese, followed by the fresh spinach.
- Drizzle olive oil evenly over the top, then pour in the chicken broth. Finish by sprinkling shredded mozzarella cheese generously across the entire dish.
- Place the dish in the oven and bake for 30–35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Let it sit for about 5 minutes before serving so the sauce can thicken slightly. Serve warm and enjoy the creamy, cheesy layers of chicken and veggies.
