Honey Buffalo Wings with Homemade Ranch

These Honey Buffalo Wings are crispy, sticky, and full of flavor, served with a creamy homemade ranch dipping sauce.

Ingredients
  

  • 1360 g chicken wings or drumettes
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • 1.5 tbsp baking powder
  • 120 ml tomato sauce
  • 80 ml hot sauce such as Cholula
  • 85 ml honey
  • 28 g unsalted butter
  • 10 ml Worcestershire sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 120 ml sour cream
  • 60 ml buttermilk
  • 30 ml mayonnaise
  • 30 g chopped fresh chives
  • 30 g chopped fresh dill
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • to taste Kosher salt
  • to taste freshly ground black pepper

Method
 

  1. Preheat oven to 425 degrees F. Coat a wire rack with nonstick spray and place on a baking sheet lined with aluminum foil; set aside.
  2. Using paper towels, pat wings dry. In a large bowl, combine wings, 1 1/2 teaspoons salt, 1 teaspoon pepper and baking powder.
  3. Place wings onto the prepared baking sheet and bake for 40-45 minutes, using metal tongs to turn at halftime.
  4. In a small saucepan over medium low heat, combine tomato sauce, hot sauce, honey, butter, Worcestershire, onion powder and garlic powder. Bring to a boil; reduce heat and simmer, stirring constantly, until slightly thickened, about 15-20 minutes.
  5. In a large bowl, combine wings and half the tomato sauce mixture. Place wings onto the prepared baking sheet and bake, turning once, until glossy and lightly caramelized, about 5-7 minutes. Stir in remaining tomato sauce mixture.
  6. Serve immediately with Ranch dipping sauce.
  7. In a medium bowl, whisk together sour cream, buttermilk, mayonnaise, chives, dill, onion powder and garlic powder; season with salt and pepper, to taste. Place in the refrigerator until ready to serve.

Notes

These wings are best served hot and crispy. Feel free to adjust the heat level by using more or less hot sauce based on your preference.
