Ingredients
  

Brownies
  • 90 g all-purpose flour for gluten-free use a 1-1 flour
  • 56 g unsweetened cocoa powder
  • 170 g unsalted butter melted
  • 200 g granulated sugar or use brown sugar
  • 107 g brown sugar
  • 2 large eggs room temperature
  • 4 g pure vanilla extract
  • 0.75 tsp kosher salt
  • 170 g chocolate chips milk, semisweet, or dark chocolate chips all work
Frosting
  • 114 ml heavy cream
  • 43 g rainbow candy-coated chocolate chips for topping, use mini M&M's or rainbow sprinkles instead

  • 9×9-inch baking pan

Method
 

  1. Preheat oven to 325°F. Spray a 9×9-inch baking pan with nonstick spray and line it with parchment paper. Set aside.
  2. In a medium bowl, whisk the flour and cocoa powder together.
  3. In a separate larger bowl, whisk the butter and sugars together.
  4. Add in the eggs, vanilla extract, and salt.
  5. Add the flour mixture to the wet ingredients and stir until just combined. Do not overmix the batter; otherwise, your brownies may come out tough.
  6. Pour the batter into the pan, and use a spatula to spread it out.
  7. Bake for 30-35 minutes, or until a toothpick comes out nearly clean. Allow brownies to cool.
  8. While the brownies are baking, place 1/2 cup of heavy cream in a pot and add 1 cup of chocolate chips. Heat, stirring until the chocolate is melted and smooth.
  9. Spread the frosting out over the brownies. Then, sprinkle rainbow chips over the frosting.
  10. Refrigerate or freeze to let the frosting set before enjoying!

Notes

To cut these brownies cleanly, dip a knife in hot water, then wipe it off between slices. You can store them in an airtight container at room temperature for up to 3 days.
