- Preheat the oven to 375°F (190°C), and ensure a rack is in the center position in the oven. Line a light-metal cookie sheet with a silicone mat.
- In a medium bowl, add the butter and brown sugar. Beat with an electric mixer on medium speed until light and fluffy, at least one full minute.
- Add the egg yolk and vanilla extract, and beat to combine.
- Sprinkle the flour, salt, baking powder, and baking soda evenly over the top of the butter mixture. Beat into the butter mixture until everything is combined.
- Stir in the chocolate chips and chopped chocolate.
- Scoop out 10 balls of dough, and space them evenly on the cookie sheet. Roll them in your hands to create perfect balls if you prefer.
- Bake for 9-10 minutes. When the edges of the cookies are just starting to brown, remove from the oven. Let cool on the baking sheet for 5 minutes, then move to a wire rack to cool completely.
Notes
Allow the cookies to cool completely for the best chewy texture. You can use light brown sugar if you don't have dark brown sugar, but the flavor will be slightly different.
