Ingredients
  

Cookie Dough
  • 6 tablespoons unsalted butter at room temperature
  • 100 g dark brown sugar packed
  • 1 egg yolk egg yolk egg white reserved for another use
  • 3/4 tsp vanilla extract
  • 120 g all-purpose flour
  • 1/4 tsp fine sea salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 53 g semisweet chocolate chips mix of chopped chocolate and chocolate chips for the best photos

Method
 

  1. Preheat the oven to 375°F, and ensure a rack is in the center position in the oven. Line a light-metal cookie sheet with a silicone mat.
  2. In a medium bowl, add the butter and brown sugar. Beat with an electric mixer on medium speed until light and fluffy, at least one full minute.
  3. Add the egg yolk and vanilla extract, and beat to combine.
  4. Sprinkle the flour, salt, baking powder, and baking soda evenly over the top of the butter mixture. Beat the flour mixture into the butter mixture until combined.
  5. Stir in the chocolate chips and chopped chocolate.
  6. Scoop out 10 balls of dough, and space them evenly on the cookie sheet. Bake for 9-10 minutes until the edges start to brown.
  7. Let cool on the baking sheet for 5 minutes, then move to a wire rack to cool completely.

Notes

For the best results, ensure your butter is softened to room temperature. Experiment with different types of chocolate for varied tastes and textures.
