Ingredients
  

Dry Ingredients
  • 2.25 cups old-fashioned oats
  • 0.5 cup brown sugar
  • 1 tsp baking powder
  • 0.25 tsp allspice
Wet Ingredients
  • 2 cups half and half
  • 2 large eggs
  • 2 tbsp salted butter
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 0.5 tsp pure vanilla extract
Mix-ins
  • 2 cups blueberries
  • 1 cup chopped pecans

Method
 

  1. Preheat oven to 375°F. Spray an 8×8-inch baking pan with nonstick spray. Set aside.
  2. In a large bowl, whisk the oats, brown sugar, baking powder, and allspice together.
  3. In another bowl, mix the half and half, eggs, butter, lemon juice, honey, and vanilla extract together until well combined.
  4. Pour the milk mixture into the oats. Mix well.
  5. Gently fold in the blueberries and pecans. For an even texture, make sure the ingredients are well mixed before spreading them into the baking dish.
  6. Transfer the batter into the prepared baking pan and spread it into an even layer.
  7. Bake for 40-45 minutes or until golden brown. Let cool before plating and serving.

Notes

Instead of blueberries, diced apples, pears, or strawberries are wonderful additions. Delicate berries like raspberries and blackberries could fall apart, so I recommend using 1 cup of blueberries and 1 cup of raspberries or blackberries.
