Ingredients
  

Cream Mixture
  • 227 g mascarpone cheese
  • 240 ml heavy whipping cream
  • 60 g powdered sugar
  • 0.5 tsp vanilla extract
Berries
  • 300 g mixed fresh berries strawberries, cherries, blackberries, raspberries and/or blueberries

Method
 

  1. Whip the mascarpone in a medium sized mixing bowl with an electric mixer.
  2. Add whipping cream, powdered sugar and vanilla. Whip until thickened.
  3. Rinse and dry berries.
  4. Layer berries and cream in single sized serving dishes.
  5. Serve immediately or cover each dish and refrigerate until serving.

Notes

For a touch of freshness, garnish with mint leaves or a sprinkle of lemon zest. This dish can be prepared a few hours in advance and kept refrigerated.
