Heavenly Strawberry Truffles Recipe: A Sweet Delight

If you’re in search of a delightful treat that’s as eye-catching as it is delicious, these Strawberry Truffles are your answer. Combining the sweet and tangy flavors of strawberries with the creamy texture of truffles, this recipe is a showstopper for any occasion. Whether you’re hosting a party, looking for a fun weekend project, or simply craving something sweet, these truffles are sure to satisfy.

Ingredients You’ll Need

  • 15.25 ounces of vanilla cake mix: I prefer using Betty Crocker for its consistent results.
  • 8 ounces of cream cheese: Make sure it’s softened to room temperature for easy mixing.
  • ½ cup of freeze-dried strawberries: Roughly chop them for that burst of strawberry flavor.
  • 20 ounces of vanilla melting wafers: Two 10-ounce bags, preferably Ghirardelli for a smooth, luxurious coating.
  • ½ cup of red candy melts: Wilton works well for a vibrant drizzle.
  • Freeze-dried strawberries: Crushed, for topping.

Step-by-Step Instructions

Heat Treating the Cake Mix

  1. Preheat your oven to 350°F: This step is crucial if you’re concerned about the safety of using uncooked cake mix.
  2. Bake the cake mix: Spread the cake mix powder onto a parchment-lined baking sheet and bake for 5 minutes. This will ensure any bacteria is eliminated.
  3. Cool completely: Allow the cake mix to cool on a wire rack.

Making the Truffles

  1. Blend the cream cheese: In a medium mixing bowl, beat the softened cream cheese until it’s smooth and creamy.
  2. Combine with cake mix: Fold the cooled cake mix into the cream cheese using a rubber spatula. Once mixed, use a mixer at medium-high speed to achieve a dough-like consistency.
  3. Incorporate the strawberries: Fold in the freeze-dried strawberries until everything is well combined.
  4. Chill the dough: Cover with plastic wrap and refrigerate for 2 hours. This makes it easier to handle and shape.
  5. Shape the truffles: Line two baking sheets with parchment paper. Use a 1 ½ tablespoon cookie scoop to portion out the dough and roll each scoop into a smooth ball.
  6. Allow to expand: Let the truffles sit for about 15 minutes to prevent cracking during coating.

Coating the Truffles

  1. Melt the wafers: Use a double boiler to melt the vanilla wafers over low heat. Alternatively, microwave in 30-second increments, stirring in between.
  2. Dip the truffles: Place a dough ball on a fork and dip it into the melted wafers. Tap the fork to remove excess coating and place the truffle on a lined baking sheet.
  3. Decorate: Before the coating sets, sprinkle crushed freeze-dried strawberries on half of the truffles. Melt the red candy melts, drizzle over the remaining truffles, and allow them to set completely.

Tips for Success

  • Chilling is key: Ensure the dough is well-chilled to make rolling easier and prevent cracking.
  • Experiment with flavors: Feel free to swap the vanilla cake mix or melting wafers for other flavors you love.
  • Microwave heat treatment: If you prefer, you can heat treat the cake mix using the microwave. Heat in a microwave-safe bowl for 3 minutes, stirring every 30 seconds.
