Why You’ll Love This Recipe

This Red Velvet Couple’s Mug Cake is not only quick to make but also low in carbohydrates, making it suitable for those following a low-carb or keto lifestyle. With the addition of natural ingredients like coconut flour and ground flaxseed, this recipe brings together health and indulgence. Plus, it’s topped with a luscious sugar-free buttercream frosting that perfectly complements the cake’s vibrant flavor.

Ingredients List

For the Cake:

  • 1 tablespoon ground flaxseed
  • 2 tablespoons coconut flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/8 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 1/4 cup heavy cream
  • 2 eggs
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon vanilla liquid stevia
  • Natural red food coloring

For the Sugar-Free Buttercream Frosting:

  • 4 tablespoons butter, softened
  • 3 tablespoons heavy cream
  • 1/2 cup Monk Fruit Allulose confectioners

Instructions

  1. Prepare the Dry Ingredients: Begin by whisking the ground flaxseed, coconut flour, cocoa powder, sea salt, and baking powder in a small bowl. This will ensure that all the dry ingredients are evenly distributed, which is crucial for the cake’s texture.

  2. Combine the Wet Ingredients: In another bowl, whisk together the heavy cream, eggs, vanilla extract, vanilla liquid stevia, and a few drops of natural red food coloring. Adjust the amount of food coloring until you reach your desired shade of red.

  3. Mix It Up: Pour the wet ingredients into the dry ingredients and stir until well combined. The batter should be smooth and free of lumps.

  4. Prepare the Ramekins: Lightly grease two 7-ounce quiche ramekins. Divide the batter evenly between them, spreading it to ensure even cooking.

  5. Cooking Options:

    • Microwave Method: Cook each ramekin individually in the microwave for 1 minute. Check the center with a toothpick—if it doesn’t come out clean, continue cooking in 30-second intervals until done.
    • Oven Method: Alternatively, bake the ramekins in a preheated oven at 325°F (163°C) for 15 minutes.
  6. Cool and Frost: Allow the cakes to cool before frosting. To prepare the frosting, combine the softened butter, heavy cream, and Monk Fruit Allulose confectioners in a bowl, beating until smooth and creamy. Spread the frosting over the cooled cakes as desired.
