Why is my peach cobbler mushy?

Peach Cobbler

A classic Southern dessert featuring sweet, juicy peaches layered under a tender, buttery crust. Perfect served warm with a scoop of vanilla ice cream.

Ingredients

Scale
  • 6 fresh peaches, peeled and sliced (about 6 cups)
  • 1 cup granulated sugar, divided
  • 1/2 cup light brown sugar
  • 1/2 cup unsalted butter (1 stick), melted
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 1/2 tsp cinnamon (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with 1/2 cup of the granulated sugar and all of the brown sugar. Let sit for 15-20 minutes to draw out the juices.
  3. Pour the melted butter into a 9×13-inch baking dish, making sure it coats the bottom evenly.
  4. In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt.
  5. Stir in the milk and vanilla extract until the batter is smooth.
  6. Pour the batter over the melted butter in the baking dish—do not stir.
  7. Spoon the peaches and their juices evenly over the batter. Again, do not stir—this layering is what creates the cobbler’s signature crust.
  8. Sprinkle cinnamon on top if using.
  9. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the crust comes out clean.
  10. Let cool for 10 minutes before serving. Best enjoyed warm with a scoop of vanilla ice cream.

Notes

  • Substitute frozen or canned peaches if fresh are not available—just drain excess liquid.
  • For added flavor, mix a splash of lemon juice with the peaches.
  • Pairs wonderfully with vanilla ice cream or whipped cream.
