- 1 lb (450g) ribeye steak or sirloin, thinly sliced
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 small green bell pepper, diced
- 1 small red bell pepper, diced
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 6 slices provolone cheese, chopped or shredded
- 12 egg roll wrappers
- 1 tablespoon flour + 2 tablespoons water (to seal wrappers)
- Vegetable oil, for frying
- Heat olive oil in a large skillet over medium-high heat. Add the onions and peppers and sauté for 3–4 minutes until softened.
- Add the garlic and cook for another 30 seconds until fragrant.
- Push the veggies to one side and add the sliced steak to the other side of the pan. Season with salt and pepper.
- Cook the steak for 3–4 minutes, stirring occasionally, until browned and cooked through. Mix with the vegetables, then remove from heat and let cool slightly.
- Stir in the chopped provolone cheese while the mixture is still warm so it melts slightly.
- Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2–3 tablespoons of filling near the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with the flour-water paste.
- Heat 2–3 inches of vegetable oil in a deep pan to 350°F (175°C). Fry egg rolls in batches, turning occasionally, until golden brown and crispy, about 3–4 minutes.
- Remove and drain on paper towels. Serve hot with ketchup, cheese sauce, or ranch dressing.
