Crispy egg rolls packed with tender steak, sautéed peppers, onions, and gooey provolone cheese—these Philly Cheesesteak Egg Rolls are the perfect mash-up of a classic sandwich and a crowd-pleasing appetizer!

Ingredients

  • 1 lb (450g) ribeye steak or sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 6 slices provolone cheese, chopped or shredded
  • 12 egg roll wrappers
  • 1 tablespoon flour + 2 tablespoons water (to seal wrappers)
  • Vegetable oil, for frying

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the onions and peppers and sauté for 3–4 minutes until softened.
  2. Add the garlic and cook for another 30 seconds until fragrant.
  3. Push the veggies to one side and add the sliced steak to the other side of the pan. Season with salt and pepper.
  4. Cook the steak for 3–4 minutes, stirring occasionally, until browned and cooked through. Mix with the vegetables, then remove from heat and let cool slightly.
  5. Stir in the chopped provolone cheese while the mixture is still warm so it melts slightly.
  6. Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2–3 tablespoons of filling near the center.
  7. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with the flour-water paste.
  8. Heat 2–3 inches of vegetable oil in a deep pan to 350°F (175°C). Fry egg rolls in batches, turning occasionally, until golden brown and crispy, about 3–4 minutes.
  9. Remove and drain on paper towels. Serve hot with ketchup, cheese sauce, or ranch dressing.

Notes

  • Use thinly sliced ribeye for the most authentic Philly flavor.
  • Try an air fryer for a lighter version of these egg rolls.
  • Make ahead and freeze before frying for quick appetizers later.
