- For the Cake:
- 2 ½ cups (315 g) all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- 1 cup (240 ml) vegetable oil
- 1 cup (200 g) granulated sugar
- 1 cup (220 g) packed light brown sugar
- 4 large eggs
- 2 tsp vanilla extract
- 3 cups (300 g) grated carrots (about 4 medium carrots)
- 1 cup (120 g) chopped walnuts or pecans (optional)
- 1 cup (120 g) raisins (optional)
- For the Cream Cheese Frosting:
- 8 oz (225 g) cream cheese, softened
- ½ cup (115 g) unsalted butter, softened
- 3 cups (360 g) powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch (23 cm) round cake pans with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
- In a large bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the grated carrots, and if using, the nuts and raisins.
- Bake the Cake:
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Make the Cream Cheese Frosting:
- In a large bowl, beat the cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, 1 cup at a time, mixing until fully incorporated.
- Stir in the vanilla extract and a pinch of salt.
- Assemble the Cake:
- Once the cakes are completely cool, spread a layer of frosting on top of one cake layer.
- Place the second cake layer on top and frost the top and sides of the cake.
- Decorate with additional chopped nuts or grated carrots if desired.
Notes
- You can substitute walnuts or pecans with other nuts or omit them entirely.
- For a tropical twist, add shredded coconut or crushed pineapple to the batter.
- Leftover cake can be stored in the refrigerator for up to 5 days.
