  • 2 tbsp (30ml) red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • For the Cream Cheese Frosting:
  • 16 oz (450g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, red food coloring, vanilla extract, and white vinegar until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until the batter is smooth and uniform.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then remove from the pans and cool completely on a wire rack.
  8. For the frosting: Beat the softened cream cheese and butter together until smooth and creamy.
  9. Gradually add the powdered sugar, 1 cup at a time, and beat until fluffy.
  10. Add the vanilla extract and beat again until smooth.
  11. Once the cakes are completely cooled, spread a layer of cream cheese frosting on top of one cake layer.
  12. Place the second cake layer on top, then frost the top and sides of the cake with the remaining cream cheese frosting.
