What Ice Cream is Good with Peach Cobbler?

For the Peach Ice Cream:

  • 3 large peaches, peeled and chopped
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/4 tsp ground cinnamon
  • Pinch of salt

For the Cobbler Crumble:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/4 cup rolled oats

Instructions

  1. In a medium saucepan, combine the chopped peaches, sugar, cinnamon, and lemon juice. Heat over medium heat until the peaches soften and release their juices, about 5-7 minutes.
  2. Remove from heat and let it cool for 10 minutes. Then, blend the peach mixture with a hand blender or in a regular blender until smooth.
  3. Stir in the heavy cream, milk, vanilla extract, and a pinch of salt. Mix until well combined. Chill the mixture in the refrigerator for at least 2 hours.
  4. In a medium bowl, combine the flour, brown sugar, granulated sugar, cinnamon, and salt for the crumble.
  5. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  6. Stir in the rolled oats, then spread the crumble mixture on a baking sheet lined with parchment paper. Bake at 350°F (175°C) for about 10-12 minutes, or until golden and crispy. Let it cool completely.
  7. Pour the chilled peach mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually for 20-25 minutes.
  8. Once the ice cream reaches soft-serve consistency, gently fold in half of the crumble mixture.
  9. Transfer the ice cream to a freezer-safe container and sprinkle the remaining crumble on top. Freeze for at least 4 hours, or until firm.
  10. Scoop the peach cobbler ice cream into bowls or cones and enjoy the delightful mix of creamy peach ice cream and crunchy cobbler topping!
