What Ice Cream is Good with Peach Cobbler?

For the Peach Ice Cream:
- 3 large peaches, peeled and chopped
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1/4 tsp ground cinnamon
- Pinch of salt
For the Cobbler Crumble:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup rolled oats
- In a medium saucepan, combine the chopped peaches, sugar, cinnamon, and lemon juice. Heat over medium heat until the peaches soften and release their juices, about 5-7 minutes.
- Remove from heat and let it cool for 10 minutes. Then, blend the peach mixture with a hand blender or in a regular blender until smooth.
- Stir in the heavy cream, milk, vanilla extract, and a pinch of salt. Mix until well combined. Chill the mixture in the refrigerator for at least 2 hours.
- In a medium bowl, combine the flour, brown sugar, granulated sugar, cinnamon, and salt for the crumble.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the rolled oats, then spread the crumble mixture on a baking sheet lined with parchment paper. Bake at 350°F (175°C) for about 10-12 minutes, or until golden and crispy. Let it cool completely.
- Pour the chilled peach mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually for 20-25 minutes.
- Once the ice cream reaches soft-serve consistency, gently fold in half of the crumble mixture.
- Transfer the ice cream to a freezer-safe container and sprinkle the remaining crumble on top. Freeze for at least 4 hours, or until firm.
