Small Batch Cinnamon Rolls: A Perfect Treat for Any Occasion

Cinnamon rolls are the quintessential comfort food—soft, sweet, and filled with the warm spice of cinnamon. Whether you’re a baking novice or a seasoned pro, making a small batch of these delightful rolls is both manageable and rewarding. This recipe will guide you through creating six large, fluffy cinnamon rolls that are perfect for a cozy breakfast or an indulgent dessert.

Ingredients You’ll Need

For the Rolls

  • 1 cup warm water: Ensure the temperature is between 95-115°F to activate the yeast effectively.
  • ¾ cup buttermilk: It should be at room temperature to blend well with the other ingredients.
  • ½ cup granulated sugar: Adds sweetness to the dough.
  • 5 tbsp butter: Melted and slightly cooled to mix easily.
  • 3 tbsp dry active yeast: The key to making the dough rise.
  • ½ tbsp table salt: Enhances the flavor of the dough.
  • 2 large eggs: These should also be at room temperature for better incorporation.
  • 5½ cups all-purpose flour: Provides structure to the rolls.

For the Filling

  • ⅓ cup butter: Melted to help the filling stick to the dough.
  • 1 cup brown sugar: Adds moisture and depth of flavor.
  • ¼ cup granulated sugar: Balances the sweetness.
  • 1 tsp cinnamon: The star spice of the filling.

For the Icing

  • 4 oz cream cheese: Softened to room temperature for a smooth texture.
  • 1 tsp vanilla extract: Adds aromatic flavor to the icing.
  • 3 cups confectioners sugar: Provides sweetness and thickness.
  • 2-4 tbsp milk: Adjust to achieve the desired consistency.

Step-by-Step Instructions

Preparing the Dough

  1. Combine Liquids: In your mixer’s bowl, combine warm water, buttermilk, granulated sugar, and melted butter. Stir well to ensure the temperature is around 95°F.

  2. Activate the Yeast: Sprinkle the dry active yeast over the mixture. Lightly press it with a fork to moisten. Allow it to proof for about 15 minutes until it becomes puffed and frothy.

  3. Incorporate Eggs and Salt: Add the eggs and salt to the yeast mixture.

  4. Mix in the Flour: Gradually fold in the flour. Use a dough hook on your mixer, mixing slowly until the flour is fully incorporated.

  5. Knead the Dough: Increase the mixer speed to medium-low and knead until the dough is smooth and elastic.

  6. Rest the Dough: Let the dough rest for 10 minutes, giving you time to prepare the filling and preheat your oven.

Preparing the Filling

  1. Mix Ingredients: In a small bowl, combine brown sugar, granulated sugar, and cinnamon. Mix with a fork until well blended.

Assembling the Rolls

  1. Preheat the Oven: Set your oven to 375°F and grease a 7½ x 11-inch baking dish.

  2. Roll Out the Dough: On a lightly floured surface, roll the dough into a flat, even layer.

  3. Add the Filling: Brush the melted butter over the dough, then evenly sprinkle the cinnamon sugar mixture on top.

  4. Form the Rolls: Starting from the long side, roll the dough tightly into a log. Cut the log into 6 even rolls—cut the log in half first, then each piece into three.

  5. Bake: Place the rolls in the prepared baking dish and bake for 15-20 minutes until golden brown.

Preparing the Icing

  1. Mix Ingredients: In a small bowl, whisk together cream cheese, vanilla extract, confectioners sugar, and enough milk to reach your desired consistency.

  2. Finish the Rolls: Drizzle the icing over the warm rolls for a delightful finish.

Tips and Tricks

  • Temperature Control: Ensuring your ingredients are at the right temperature is crucial for the dough to rise correctly.
  • Cutting the Dough: Using unflavored dental floss instead of a knife can help cut the dough without squashing it.
  • Icing Consistency: Adjust the milk in the icing to achieve a thicker or thinner consistency based on your preference.
