Ingredients
  

Rolls
  • 240 ml warm water 95-115 degrees is perfect
  • 180 ml buttermilk room temperature
  • 100 g granulated sugar
  • 70 g butter melted & slightly cooled
  • 3 tbsp dry active yeast
  • 0.5 tbsp table salt
  • 2 large eggs room temperature
  • 660 g all-purpose flour
Filling
  • 80 g butter melted
  • 200 g brown sugar
  • 50 g granulated sugar
  • 1 tsp cinnamon
Icing
  • 113 g cream cheese room temperature
  • 1 tsp vanilla extract
  • 360 g confectioners sugar
  • 30 ml milk up to 4 tbsp depending on desired thickness

Equipment

  • Mixer
  • 7 ½ x 11 baking dish

Method
 

  1. Combine the water, buttermilk, sugar, and melted butter in the mixer bowl. Stir – this should lower the temperature overall. You want it to be at 95 degrees.
  2. Once the water mixture has cooled to the right temperature – sprinkle the yeast on the top. Lightly press it with a fork into the liquid to moisten it. Let it sit to proof for 15 min. It should be puffed and frothy.
  3. Add in the eggs, and salt.
  4. Fold in the flour, and mix slowly using a dough hook until flour is incorporated.
  5. Set the mixer on med-low speed and mix/knead until smooth.
  6. Once mixed, let the dough rest for 10 minutes while you make the filling and preheat the oven.
  7. Prepare the filling by combining the brown sugar, sugar, cinnamon, nutmeg & ginger in a small bowl and mixing it with a fork.
  8. Preheat oven to 375 degrees and grease a 7 ½ x 11 baking dish.
  9. Roll dough out on a lightly floured surface into a flat & even layer.
  10. Brush with melted butter and then sprinkle the filling mixture on top.
  11. Roll tightly on the long side and then cut the log into 6 large rolls (The easiest way to make them even is to first cut the log in half and then cut those two pieces into 3.
  12. Place them in the prepared dish and bake 15-20 minutes.
  13. Remove and allow them to cool slightly while you mix the icing.
  14. Prepare the icing by combining all ingredients in a small bowl and whisking well until you reach the desired consistency.
  15. Drizzle over the top of the rolls while they are still warm.

Notes

These cinnamon rolls are best enjoyed warm, fresh out of the oven. Feel free to adjust the icing thickness to your preference by adding more milk.
