Salted Chocolate Strawberry Tart: A Decadent Dessert

There’s something utterly magical about the combination of chocolate and strawberries. It’s a classic pairing that reminds us of romance, indulgence, and pure satisfaction. The Salted Chocolate Strawberry Tart takes this beloved duo and elevates it to a gourmet experience. With a luscious, creamy filling encased in a rich, nutty crust, this tart is a perfect dessert for any special occasion or just a treat for yourself. Let’s dive into the details of how you can recreate this masterpiece in your own kitchen.

Ingredients Breakdown

For the Crust:

  • Chocolate Liquid Monk Fruit: This natural sweetener is a low-calorie substitute for sugar, adding a hint of sweetness without the guilt. It’s perfect for those watching their sugar intake.
  • Unsweetened Coconut Shredded: Adds texture and a subtle hint of coconut flavor that complements the chocolate.
  • Unsweetened Cocoa Powder: Intensifies the chocolate flavor in the crust.
  • Pumpkin Seeds: A nutty ingredient that can be replaced with sunflower seeds if preferred, adding crunch and nutritional benefits.
  • Butter: Provides richness and helps bind the crust ingredients together.
  • Salt: Enhances the flavors and balances the sweetness.

For the Filling:

  • Chocolate Liquid Monk Fruit: Used again to sweeten the chocolate filling to your liking.
  • Sugar-Free Chocolate Bar: Ensures the tart remains low in sugar while still offering a deep chocolate flavor.
  • Unsweetened Chocolate: Provides a robust chocolate base for the filling.
  • Heavy Cream: Creates a silky ganache texture that melts in your mouth.

For the Topping:

  • Strawberries: Fresh, juicy, and vibrant, they add a refreshing contrast to the rich chocolate.
  • Coarse Sea Salt: A sprinkle of this enhances the chocolate flavor and adds a delightful crunch.

Step-by-Step Instructions

1. Prepare the Crust

Start by adding all the crust ingredients into a food processor. Blend until the mixture forms fine crumbs. This process ensures that the ingredients are well combined and the texture is perfect for forming a crust. Press this mixture evenly into a tart pan, ensuring it’s compact and smooth. Set it aside as you prepare the filling.

2. Make the Chocolate Filling

In the same food processor (no need to wash it, as it will just add more flavor), process the chocolate bar and unsweetened chocolate until finely chopped. Transfer this mixture to a bowl.

In a saucepan, gently heat the heavy cream over medium-low heat until it’s steaming hot, but make sure it doesn’t boil. Pour this hot cream over the chocolate and let it sit for a couple of minutes. This resting period allows the chocolate to soften and melt. Stir the mixture until it’s smooth and glossy. Add 1 teaspoon of chocolate liquid monk fruit, taste, and adjust sweetness to your preference.

3. Assemble the Tart

Pour the chocolate ganache into the prepared crust, spreading it evenly. Refrigerate the tart for at least two hours to allow the filling to set firmly.

4. Garnish and Serve

Before serving, sprinkle the tart with coarse sea salt. This final touch not only enhances the chocolate but also adds an intriguing flavor contrast. Top with halved strawberries, arranging them artfully for a visually stunning presentation.

5. Serving Tips

If you prepare the tart in advance and refrigerate it overnight, make sure to let it sit at room temperature for about 3-4 hours before slicing. This step ensures the filling is soft and easy to cut through, offering the perfect slice every time.

Ingredients

Crust
  • 0.5 tsp Chocolate liquid Monk Fruit
  • 50 g unsweetened coconut shredded
  • 75 g unsweetened cocoa powder
  • 75 g pumpkin seeds unsalted (sunflower seeds can be substituted)
  • 85 g butter softened
  • 0.25 tsp salt
Filling
  • 1-2 tsp Chocolate liquid Monk Fruit
  • 113 g sugar free chocolate bar chopped
  • 227 g unsweetened chocolate chopped
  • 240 ml heavy cream
Topping
  • 227 g strawberries halved
  • 0.5 tsp coarse sea salt

Equipment

  • Food Processor
  • Tart Pan
  • Saucepan

Method

  1. Add all the crust ingredients to a food processor and process until fine crumbs form. Spread and press the crust mixture into a tart pan as evenly as possible. Set aside.
  2. To make filling, place the chocolate bar and baking chocolate into the food processor and process until fine. Remove to a bowl and set aside.
  3. Pour heavy cream into a saucepan. Over medium-low, heat cream, but do not boil. You just want it steaming hot. Remove and pour over chocolate in bowl. Let rest 2-3 minutes. Stir mixture until chocolate is smooth.
  4. Stir in 1 tsp. chocolate Liquid monk fruit. Taste and add more, if needed, to reach your desired sweetness. Pour this chocolate mixture into the tart shell and spread to even it out.
  5. Refrigerate for 2 hours before serving. When ready to serve, sprinkle with coarse sea salt and top with fresh strawberries.
  6. If you are making this ahead and the tart stays in the fridge overnight, allow plenty of time out on the counter, at least 3-4 hours before serving, otherwise it will be too hard to cut into pieces.

Notes

For best results, use fresh, ripe strawberries and allow the tart to rest at room temperature before serving to ensure easy slicing.
