For the crust:

  • 2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1/4 cup sugar

For the pecan pie layer:

  • 2 cups pecan halves
  • 1 cup light brown sugar
  • 1/2 cup corn syrup (light or dark)
  • 3 large eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt

For the cream cheese layer:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy cream

For the whipped topping:

  • 1 cup heavy whipping cream
  • 1 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until fully combined.
  2. Press the mixture evenly into the bottom of a 9×13-inch baking dish to form the crust. Set aside.
  3. In a separate bowl, whisk together brown sugar, corn syrup, eggs, melted butter, vanilla extract, and salt until smooth.
  4. Stir in the pecan halves, then pour the mixture over the graham cracker crust in the baking dish.
  5. Bake at 350°F (175°C) for 20-25 minutes, or until the edges are set, and the center is slightly jiggly. Let it cool completely.
  6. In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  7. Gradually add in the heavy cream, and beat until stiff peaks form, creating a whipped consistency.
  8. Spread the cream cheese mixture evenly over the cooled pecan pie layer in the baking dish.
  9. In a separate bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Spread the whipped cream over the cream cheese layer, smoothing it into an even layer.
  11. Refrigerate the lasagna for at least 4 hours or overnight to allow the layers to set.
  12. Before serving, garnish with extra chopped pecans if desired.
