- 4 ripe peaches, peeled and diced
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 tbsp cornstarch (optional, for thickening)
- 1 cup crushed graham crackers (for the cobbler topping)
- Prepare the peaches: In a medium saucepan, combine diced peaches, sugar, cinnamon, nutmeg, and salt. Cook over medium heat, stirring occasionally, until the peaches soften and release their juices (about 5-7 minutes).
- Thicken the mixture (optional): If you prefer a thicker consistency for the ice cream, mix 1 tablespoon of cornstarch with a bit of cold water, then stir it into the peach mixture. Continue to cook for another 2-3 minutes, until it thickens.
- Cool the peach mixture: Remove the saucepan from the heat and let the mixture cool completely at room temperature. Once cooled, blend the mixture slightly with an immersion blender or regular blender, leaving a few peach chunks for texture.
- Prepare the ice cream base: In a separate bowl, whisk together the milk, heavy cream, and vanilla extract until combined.
- Combine peach and cream: Add the cooled peach mixture to the cream mixture, stirring gently until fully incorporated.
- Chill the ice cream mixture: Pour the mixture into an airtight container and refrigerate for at least 4 hours, or preferably overnight, to chill.
- Churn the ice cream: Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions (about 20-25 minutes).
- Add graham cracker topping: After churning, gently fold in the crushed graham crackers to give it that cobbler-inspired crunch.
- Freeze until firm: Transfer the ice cream to a container and freeze for 2-4 hours, or until firm enough to scoop.
- Serve and enjoy! Scoop the ice cream into bowls or cones and enjoy the peachy, cobbler goodness!
Notes
- The cornstarch step is optional but will help thicken the peach mixture for a richer texture in the ice cream.
