No-Bake Orange Creamsicle Cheesecake Recipe

- For the crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp unsalted butter, melted
- For the filling:
- 16 oz cream cheese, softened
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp orange zest
- ½ cup freshly squeezed orange juice
- 1 packet (0.25 oz) unflavored gelatin
- 2 tbsp water
- For topping:
- Orange slices, for garnish
- Whipped cream, optional
- Make the crust:
- In a bowl, combine the graham cracker crumbs and granulated sugar.
- Stir in the melted butter until the mixture is evenly coated and resembles wet sand.
- Press the mixture into the bottom of a 9-inch springform pan. Use the back of a spoon to compact the crumbs. Set aside in the fridge to firm up.
- Prepare the filling:
- In a small bowl, sprinkle the gelatin over 2 tbsp of water and let it sit for about 5 minutes to bloom.
- In a medium-sized mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.
- Add the powdered sugar, vanilla extract, orange zest, and orange juice. Beat again until fully combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
- Dissolve the gelatin:
- Heat the bloomed gelatin in the microwave for 10-15 seconds until melted and clear.
- Gradually stir the gelatin into the cream cheese mixture, ensuring it’s fully incorporated.
- Assemble the cheesecake:
- Pour the cream cheese filling over the prepared crust, smoothing it out with a spatula.
- Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to set completely.
- Serve:
- Once set, remove the cheesecake from the springform pan.
- Garnish with fresh orange slices and a dollop of whipped cream, if desired.
Notes
- Make sure the gelatin is fully dissolved to avoid any lumps in the cheesecake filling.
- For a stronger orange flavor, you can add a little extra orange zest.
- Store leftovers in the fridge for up to 3 days.
