No-Bake Orange Creamsicle Cheesecake Recipe

A refreshing and creamy dessert inspired by the nostalgic taste of an orange creamsicle. Perfect for summer or as a sweet treat without the need to turn on the oven!

  • For the crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • For the filling:
  • 16 oz cream cheese, softened
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • ½ cup freshly squeezed orange juice
  • 1 packet (0.25 oz) unflavored gelatin
  • 2 tbsp water
  • For topping:
  • Orange slices, for garnish
  • Whipped cream, optional

Instructions

  1. Make the crust:
  2. In a bowl, combine the graham cracker crumbs and granulated sugar.
  3. Stir in the melted butter until the mixture is evenly coated and resembles wet sand.
  4. Press the mixture into the bottom of a 9-inch springform pan. Use the back of a spoon to compact the crumbs. Set aside in the fridge to firm up.
  5. Prepare the filling:
  6. In a small bowl, sprinkle the gelatin over 2 tbsp of water and let it sit for about 5 minutes to bloom.
  7. In a medium-sized mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.
  8. Add the powdered sugar, vanilla extract, orange zest, and orange juice. Beat again until fully combined.
  9. In a separate bowl, whip the heavy cream until stiff peaks form.
  10. Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
  11. Dissolve the gelatin:
  12. Heat the bloomed gelatin in the microwave for 10-15 seconds until melted and clear.
  13. Gradually stir the gelatin into the cream cheese mixture, ensuring it’s fully incorporated.
  14. Assemble the cheesecake:
  15. Pour the cream cheese filling over the prepared crust, smoothing it out with a spatula.
  16. Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to set completely.
  17. Serve:
  18. Once set, remove the cheesecake from the springform pan.
  19. Garnish with fresh orange slices and a dollop of whipped cream, if desired.

Notes

  • Make sure the gelatin is fully dissolved to avoid any lumps in the cheesecake filling.
  • For a stronger orange flavor, you can add a little extra orange zest.
  • Store leftovers in the fridge for up to 3 days.
