Mixed Berry Mini Pies: A Delightful Bite-Sized Treat

If you’re a fan of fruity desserts, these Mixed Berry Mini Pies are the perfect treat to indulge in. Packed with fresh raspberries, blueberries, blackberries, and strawberries, these pies offer a symphony of flavors in every bite. Whether you’re hosting a gathering or simply want to enjoy a sweet treat, these mini pies are sure to impress. Let’s dive into the recipe and some tips to make these delicious delights.

Ingredients

  • Pie Dough: Your favorite recipe, store-bought, or try my go-to pie crust recipe.
  • 7 cups fresh mixed berries: A vibrant mix of raspberries, blueberries, blackberries, and strawberries.
  • 1 cup sugar
  • 1/4 cup cornstarch: For thickening the berry filling.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice: Adds a zesty touch that enhances the berry flavor.
  • 2 tablespoons unsalted butter, cubed
  • 1 egg, beaten: For the egg wash.
  • Coarse sugar for garnish

Instructions

  1. Prepare the Oven: Preheat your oven to 400 degrees F. This ensures that the pies start baking at the right temperature for a perfect crust.

  2. Mix the Berries: In a large bowl, combine the mixed berries, sugar, cornstarch, vanilla extract, and lemon juice. Stir gently until the berries are well-coated. Set aside to allow the flavors to meld.

  3. Roll Out the Dough: Roll out your pie dough to a thickness of 1/8 inch. This will be the perfect thickness for a flaky crust. Cut the dough into sections, ensuring you have enough to line 5-6 mini pie dishes and additional pieces for the top crusts.

  4. Assemble the Pies: Line each mini pie dish with the rolled-out dough, letting any excess hang over the edge. Evenly distribute the berry mixture among the dishes.

  5. Top the Pies: Brush the edges of the dough with the beaten egg to act as a glue. Place the remaining dough pieces over the filling and seal the edges by pinching or using a fork. Trim any excess dough for a clean finish.

  6. Add Finishing Touches: Use a knife to cut two vents in the top of each pie to allow steam to escape. Brush the tops with the egg wash and sprinkle with coarse sugar for added texture and sweetness.

  7. Bake: Place the mini pies on a baking sheet to catch any drips. Place in the oven and immediately reduce the temperature to 350 degrees F. Bake for 35-40 minutes until the tops are golden brown and the filling is bubbly.

  8. Cool and Serve: Allow the pies to cool for at least 30 minutes before serving. This cooling period helps the filling set, making them easier to serve and enjoy.
