Chicken
  • 680 g chicken breast 4 small or 3 large
  • 2 tbsp all-purpose flour
  • 2 tsp table salt
  • 2 tsp pepper
Sauce
  • 3 tbsp butter divided, unsalted
  • 6 clove garlic minced
  • 480 ml heavy cream
  • 85 g sun-dried tomatoes 1 envelope
  • 3 cup baby spinach loosely packed
  • 50 g parmesan cheese freshly grated

Method
 

  1. Lay the chicken out on a plate or prep tray.
  2. Sprinkle both sides of the chicken with the flour, salt, and pepper.
  3. Melt 2 tbsp of the butter in a large skillet over medium heat.
  4. Once melted, add the seasoned chicken breasts and cook for 4-5 minutes or until cooked through. They should be golden brown on both sides. Remove from the skillet and let them rest on a plate while you make the sauce.
  5. Add the remaining butter to the pan with the garlic, cooking until fragrant.
  6. Reduce the heat to low and add the heavy cream and sun-dried tomatoes. Bring to a simmer.
  7. Stir in the spinach and parmesan, simmering until the cheese has melted.
  8. Nestle the cooked chicken into the sauce to coat before serving. Drizzle additional sauce on top of the chicken to serve.

Notes
