How do you keep peach cobbler crust from getting soggy?

- 6 fresh peaches, peeled and sliced (about 6 cups)
- 1 cup granulated sugar, divided
- 1/2 cup light brown sugar
- 1/2 cup unsalted butter (1 stick), melted
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 3/4 cup milk
- 1/2 tsp cinnamon (optional, for topping)
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with 1/2 cup of the granulated sugar and all of the brown sugar. Let sit for 15-20 minutes to draw out the juices.
- Pour the melted butter into a 9×13-inch baking dish, making sure it coats the bottom evenly.
- In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt.
- Stir in the milk and vanilla extract until the batter is smooth.
- Pour the batter over the melted butter in the baking dish—do not stir.
- Spoon the peaches and their juices evenly over the batter. Again, do not stir—this layering is what creates the cobbler’s signature crust.
- Sprinkle cinnamon on top if using.
- Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the crust comes out clean.
- Let cool for 10 minutes before serving. Best enjoyed warm with a scoop of vanilla ice cream.

- Substitute frozen or canned peaches if fresh are not available—just drain excess liquid.
- For added flavor, mix a splash of lemon juice with the peaches.
