French Onion Meatloaf with Melted Swiss Cheese

A twist on the classic meatloaf, this French Onion Meatloaf is loaded with savory caramelized onions and topped with melted Swiss cheese. It’s a comforting, hearty dish perfect for dinner or special gatherings.

  • For the meatloaf:
  • 1 1/2 lbs ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • For the French onion topping:
  • 2 tablespoons butter
  • 2 medium onions, thinly sliced
  • 1 tsp sugar
  • 1/4 cup beef broth
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • For the Swiss cheese topping:
  • 8 oz Swiss cheese, sliced or shredded

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, milk, finely chopped onion, minced garlic, egg, Worcestershire sauce, dried thyme, oregano, salt, and pepper. Mix everything together until fully combined.
  3. Transfer the meat mixture into a greased 9×5-inch loaf pan, shaping it into a loaf.
  4. In a medium skillet, melt butter over medium heat. Add the thinly sliced onions and cook for about 5 minutes until they begin to soften.
  5. Sprinkle in the sugar and continue to cook for another 15 minutes, stirring occasionally, until the onions become golden brown and caramelized.
  6. Add the beef broth and balsamic vinegar to deglaze the pan, scraping up any browned bits from the bottom. Season with salt and pepper, then remove from heat.
  7. Place the loaf pan in the preheated oven and bake the meatloaf for 45 minutes, or until it reaches an internal temperature of 160°F (71°C).
  8. Once the meatloaf is fully cooked, remove it from the oven. Spread the caramelized onion mixture evenly over the top of the meatloaf.
  9. Place the sliced or shredded Swiss cheese over the caramelized onions. Return the meatloaf to the oven and bake for an additional 5-7 minutes, or until the cheese has melted and is golden and bubbly.
  10. Remove from the oven and allow the meatloaf to rest for 5 minutes before slicing. Serve with your favorite sides.

  • For a richer flavor, you can substitute the ground pork with ground veal.
  • Top with fresh parsley or chives for an extra burst of color and flavor.
