Cinnamon Roll Pancakes: A Delicious Twist on Breakfast

There’s nothing quite like the heavenly aroma of cinnamon rolls baking in the oven. Combine that with fluffy pancakes, and you’ve got a breakfast masterpiece—Cinnamon Roll Pancakes! These pancakes capture the essence of cinnamon rolls, complete with a sweet, creamy glaze, perfect for a weekend treat or a special brunch.

What Makes Cinnamon Roll Pancakes Special?

Cinnamon Roll Pancakes offer the best of both worlds. They combine the light, airy texture of pancakes with the rich, sweet flavors of a classic cinnamon roll. The cinnamon swirl baked into the pancake creates a delightful marbled effect, while the cream cheese glaze drizzled on top adds a luscious finishing touch.

Ingredients You’ll Need

To make these delectable pancakes, you’ll need a few simple ingredients:

For the Pancakes:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted

For the Cinnamon Swirl:

  • ¼ cup unsalted butter, melted
  • ¼ cup packed light brown sugar
  • 1 tablespoon ground cinnamon

For the Cream Cheese Glaze:

  • 2 oz cream cheese, softened
  • ½ cup powdered sugar
  • 2 tablespoons milk
  • ¼ teaspoon vanilla extract

Instructions

Step 1: Prepare the Cinnamon Swirl

In a small bowl, mix together the melted butter, brown sugar, and cinnamon. Pour the mixture into a piping bag or a resealable plastic bag. Set aside.

Step 2: Make the Pancake Batter

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Step 3: Cook the Pancakes

Preheat a non-stick skillet or griddle over medium heat. Lightly butter the surface. Pour about ¼ cup of pancake batter onto the skillet. Snip the corner of the bag with the cinnamon mixture and pipe a swirl onto the batter. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown. Repeat with the remaining batter.

Step 4: Prepare the Cream Cheese Glaze

In a small bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, milk, and vanilla extract, stirring until well combined and smooth. Adjust the consistency with more milk if needed.

Step 5: Serve

Stack the pancakes on a plate and drizzle generously with the cream cheese glaze. Serve warm and enjoy the delightful flavors of cinnamon roll pancakes!

Tips for Perfect Pancakes

  1. Consistent Heat: Maintain a steady medium heat to ensure even cooking.
  2. Don’t Overmix: Overmixing the batter can lead to tough pancakes. Stir until ingredients are just combined.
  3. Adjust Cinnamon Swirl Consistency: If the cinnamon swirl mixture thickens too much, briefly warm it to make it easier to pipe.

  • 1.25 ml vanilla extract

Equipment

  • Microwave-safe Bowl
  • 8×8 Baking Pan

Method

  1. Preheat the oven to 350 degrees F. Line a square 8×8 baking pan with foil, leaving extra on the sides to lift the brownies out, then coat it with butter.
  2. In a microwave safe bowl or cup, heat ½ cup of the butter until melted, allow to cool.
  3. Add the cooled butter to a large mixing bowl. Beat in the sugar, cocoa powder, food coloring, vinegar, vanilla extract, and salt, until well combined.

  10. Remove the pan from the oven and allow it to cool on a wire rack. Cut and serve. Store in airtight container in the refrigerator.

Notes

For a more vibrant color, increase the amount of red food coloring. Make sure not to overmix the batter for a tender texture.
